We come from three steps
- In the first article we dismantled the superstition that natural means good.
- In the second, we saw that molecules are not good or bad because of their origin: structure, dose, exposure, and context matter.
- In the third, we moved into the commercial and regulatory terrain: eco, bio, and organic do not mean universal superiority; they mean production under certain rules.
Now it is time to place the green label under two uncomfortable lights: food safety and environmental impact.
Because a label can say how a food was produced.
- But it cannot prove, by itself, that the food is safer, healthier, or better for the planet.
- That leap must be proven. Not suggested. Not implied. Proven.
Another frequent argument is safety
People say: organic is safer because it uses fewer synthetic pesticides or because it reduces exposure to certain residues.
That statement has a reasonable part. Organic diets may reduce exposure to some pesticide residues. If that is the consumer's specific goal, it can be an argument.
But reducing certain residues is not the same as demonstrating overall health superiority. Food safety is broader.
- It includes microbiological contamination.
- It includes mycotoxins.
- It includes heavy metals.
- It includes poor preservation practices.
- It includes hygiene.
- It includes the cold chain.
- It includes fraud.
- It includes dose.
- It includes individual vulnerability.
A food can be organic and poorly preserved. It can be natural and contaminated. It can be artisanal and dangerous. It can be conventional and perfectly controlled.
The seal does not replace analysis.
In addition, research on human health has an important problem: people who buy organic usually have, on average, other different behaviors.
- They may smoke less, exercise more, have higher income, higher education, better access to fresh foods, and greater interest in their health.
So when a study observes that organic consumers have better outcomes, we must ask:
- Is it because of the organic food?
- Or because of their overall lifestyle?
This question does not destroy the evidence. It orders it.
- Feynman said it with uncomfortable clarity: “the first principle is that you must not fool yourself. And you are the easiest person to fool.”
That is why we must separate desire from label. We must recognize that we tend to confuse correlation with cause.
And that confusion sells a lot.
It does not always reduce environmental impact
Here the debate becomes even more interesting.
Organic agriculture may have environmental advantages per hectare.
- Less use of certain synthetic pesticides.
- Better local biodiversity in some systems.
- Lower ecotoxicity in certain indicators.
- More care for the soil in certain practices.
- Less dependence on some inputs.
All that deserves respect. But the other half of the question is missing: how much does it produce? Because the planet does not eat hectares. It eats food.
If a system produces less per unit of land, it may need more land to produce the same amount of food. And land is not surplus. Land devoted to crops is not devoted to forest, wetland, wildlife habitat, or natural regeneration.
This is the point many campaigns hide.
It is not enough to measure impact per hectare. We must also measure impact per kilo produced, per calorie, per protein, per complete diet, and per alternative use of land.
A system may look cleaner per hectare and not be so clean per unit of food. Or it may improve one indicator and worsen another.
- Fewer residues at one point, more land use at another.
- Less energy in one phase, more emissions per kilo in another.
- More local biodiversity, but lower yield.
- and more territorial pressure if scaled massively.
Environmental reality does not fit on a sticker. Comparative reviews show precisely that tension.
- Organic agriculture tends to yield less on average than conventional agriculture, although the difference depends greatly on crop, climate, soil, and management quality.
- Some studies find clear advantages per surface area, but less forceful results per unit of product.
- Others warn that a full transition to lower-yield systems could require more land or strong changes in diet, food waste, and meat consumption.
Serious environmentalism should love this complexity. Marketing hates it.
Because complexity forces us to think. And thinking sells worse than a green label.
